Being jobless is really frustrating and in such trying times,food is what comforts you(at least 90% of the time).
I wanted to get innovative and creative with my culinary skills and decided to cook with whatever I had.My refrigerator is usually well stocked but today,all I could find was mushrooms and a crate of eggs.Since it was just the two of us,I thought "what the heck!" and decided on making mushroom & egg curry.
The result : a yummy dish...almost like having mutton & egg curry,so something to jot down and remember for the days when I decide to be a vegetarian.
Ingredients :-
4 Eggs boiled
1 pack of sliced mushrooms
1 bunch of cilantro
1 tsp garam masala powder or curry powder
1 big size onion chopped
3 tbsp oil
1 tsp cumin seeds
1tbsp channa dal
3 red chillies
1 sprig curry leaves(optional)
2 cloves
1-2 tsp ginger garlic paste
2 tsp red chilli powder(depending on ur taste)
1/2 tsp turmeric powder
Salt as per taste
Method:-
- Heat the oil in a kadai or wok and add cumin seeds,red chillies and channa dal.Let the channa dal splutter and then add the onions
- Saute the onions for a while until they turn translucent or slight brownish.Add ginger garlic paste and saute for some more time
- Once the oil separates,add turmeric,red chilli powder,garam masala or curry powder and fry the onions for 5-6 mins
- The aroma of the masalas starts to fill the air,wash the mushrooms thoroughly and dice them to small cubes.Add these diced mushrooms to the kadai and mix well,such that the masala and onions are well coated on the muhrooms.Cover for 10 mins and keep stirring in between.
- Leave the flame on medium and once the mushrooms are cooked well and turn to a brownish grey color,add salt and the boiled eggs as well.
- Leave for a min or two.
- Garnish with cilantro and Voila!Yummy mushroom & egg curry...:)
